In the glass an intense deep red color with bright and ruby reflections.
In the medium(++) nose notes of black fruits, earthy tones, leather and minerals, with a preponderance of ripe forest fruits, vanilla and slightly burnt overtones.
On the full palate, dry with medium acidity and medium(+) tannins. Elegant and balanced with an entrance of ripe dark fruit followed by a fresh palate with an unctuous, long finish with light wood tones. A wine to enjoy by the fireplace with a good book.
Pairs perfectly with:
Meat and fish, salads with forest fruits, jams and soy. Also with non-citric and rather sweet desserts such as nougat, coulants, etc. It pairs excellently with sweet and sour contrasts, caramelized onions, soy, compotes, chocolate sauces, etc.
Grenache and Carignan from 100-year-old vines. Cabernet Sauvignon from vineyards between 20 and 25 years old, Syrah and Merlot from vineyards between 15 and 20 years old. All in the municipalities of Bellmunt del Priorat, La Vilella Baixa,
Gratallops, Falset and El Molar.
The grape varieties are fermented separately. The maceration is long and takes place at a temperature between 26 ºC and 28 ºC. Then the malolactic fermentation takes place. Then the wine is aged in French oak barrels for about 10-14 months,
depending on the vintage. It is blended, bottled and aged in the bottle for a minimum of 6-8 months.
