This Aigua de Llum 2021 from winery Vall Llach is a moncocépage of 100% Viognier. The grapes are destemmed and the pressing and maceration beforeóór fermentation takes place in stainless steel tanks for 24 hours at a set temperature.
Fermentation in stainless steel for 25-60 days at temperatures between 12 and 15ªC with daily batonnage. The wine was transferred to the same 300 liters. The wine is aged in French oak barrels during the 4-month aging process.
The annual production is 800 bottles.

In the nose peach, lime and yellow apple with hints of flowers, tropical fruit and nice spiciness
On the palate dry, medium acidity with nice elegance.
The finish is long and balanced.

This white wine is a very special wine in every sense of the word. It is a white wine made with Viognier grapes sourced from vineyards planted in one of the most difficult areas of their property, "Mas d'El Porrerà". They then blend the Viognier with this Grenache, Piquepoule, Macabeo and Escanyavelles (literally "Old Lady Choker") from their plots.
This limited production of no more than 800 bottles per vintage is a tribute to Catalan poet Miquel Martí i Pol, a friend of the winery since its inception.
The name "Aigua de Llum" means "Water of Light" and is an excerpt from a poem called Solstici (Solstice):
There will come a day when someone will drink with full hands
the water of light that bubbles up from the stones...

Every year the winery organizes "Terra i Cultura" ("Land and Culture") where the award Miquel Martí i Pol is presented in memory of the special relationship this poet has shared with the winery.
