Selma Ancestral 2020 from winery Celler Nin Ortiz is a Pet Nat wine without designation of origin produced in El Pla de Manlleu (Penedès) by winemaker Ester Nin. This wine is a blend of the varieties Roussane, Marsanne, Parellada and Chenin Blanc.
The fermentation of this Pet Nat takes place on 225-liter oak barriques (used). Sur lies another élevage of about 8 months and only autochthonous yeasts are used. Almost no addition of sulfite.
This Selma Ancestral shows almost no bubble in the glass with a very light perlage. Light citrus yellow color.
In the nose aromas of yellow apple, melon and white flowers with hints of fennel and light cedar.
In the mouth a nice round monfeel with nice acidity. Mineral undertones with ripe white fruit and a very slight bitterness, sweetness in the finish. Full and complex with a bitterness at the end.
