    About this wine

First vintage of this Pet Nat wine from the Priorat wine region.

Pet Nat is short for Pétillant Naturel, which literally means 'naturally effervescent' in French. It is a type of sparkling wine produced naturally. It is also called 'methode ancestrale' which refers to the traditional method of making sparkling wines before the 'methode champenoise' was invented.

For Pet Nat, the grapes are harvested early in the winemaking process and the fermentation process is stopped before all the sugar is converted to alcohol. Fermentation then continues in the bottle with no additional sugar or yeast added. This creates carbon dioxide in the bottle, resulting in a light, effervescent wine with a low alcohol content. The yeast deposit in the bottle creates a cloudy appearance and often a slightly bitter taste.
