The Simphonia and Dolç 2007 (Symphony of sweet)from winery Sangenis I Vaqué is a blend of 90% Grenache – 10% Carignan.
In 2007, the Sangenís family could only harvest grapes in one of their vineyards that had dried to currants by the sun. Hesitantly, the harvest was picked anyway and fermented as for the other wines. This one-time 2007 experiment yielded just 800 half-liter bottles.
Wine made from curried grapes whose fermentation took place in oak barrels, with no added sugar or alcohol, natural filtration and clarification.
This Simphonia en Dolc 2007 shows a bright garnet red color.
In the medium(++) nose, candied notes of blackberry, black currant, raisins, balsamic. cocoa, toast and minerals.
In the mouth a real symphony of pleasure in which the sweetness is very balanced thanks to the acidity, avoiding at all times a too sweet taste. Balanced, light, full, creamy, warm, with amusing acidity, jam, toast and a long finish.
Fits perfectly with
All types of cheeses, chocolate and foie gras
This wine was actually a mistake but ultimately turned out to be a treat as a dessert wine. Wine from raisined grapes whose fermentation took place in oak barrels with no added sugar or alcohol, natural filtering and clarification.
