Mas Doix - Doix 2017 is a red wine made with Carignan and Grenache from old vineyards planted on slopes of licorella (slate) at an altitude between 350 and 500 meters.
The harvest is done manually, the grapes are selected on a double selection table. Each plot is converted into wine separately. Fermentation takes place in temperature controlled stainless steel tanks. Once the alcoholic fermentation is finished, it goes through the aging process for 16 months in French oak barrels of extra fine wood. This wine is bottled without clarification or filtering.
This 2017 Doix has a deep purple-red color in the glass.
In the nose medium to high intensity with aromas of ripe black and red fruits, pepper, anise, cedar, chocolate, spices and graphite notes.
In the mouth a full and powerful wine with still medium(+) acids and ripe tannins present. Fleshy and round on the palate with a long finish. A wine that you can already drink nicely after decanting but also feel free to leave for another ten years to become nicely rounded.
Pairs perfectly with:
Goes well with game roasts, sausage cassoulet, roast rabbit, duck and spicy cheeses.
