Mas Doix 2020's Salix is a new white blend of 67% Garnacha Blanca, 18% Macabeo and 15% Pedro Ximénez.
The grapes are picked by hand. Transport to the winery is in small 10 kg boxes. The grapes are pressed immediately. This is followed by fermentation, which takes place half in stainless steel tanks and half in oak barrels. The 3 months aging on lees is also done in a perfect mix of stainless steel and oak barrels. The annual production is only 1,800 bottles.
In the glass, the Salix 2020 has a bright and brilliant straw yellow color.
On the medium (+) nose aromas of ripe yellow apples, honey and lemon with hints of melon, almonds, smoke, spice, light petrol notes and orange peel.
On the palate dry, medium (+) body with medium acidity, nice freshness and soft texture. Flavors are a reminder of the nose with a medium (+) intense finish.
Pairs perfectly with:
Fish, goat cheese, cured and hard cheese, mushroom, poultry, shellfish and vegetarian dishes.
The grapes for the Salix 2020 are harvested manually in 10 kg crates. Selection grape by grape when they reach the winery. Pressing and removal of static skin. 50% fermented in French oak barrel with 3 months aging and 50% fermented in stainless steel tank and 3 months aging on lees.
Year 2020:
Due to high temperatures, the plants began their vegetative growth 2-3 weeks earlier than normal. This progression of the cycle, along with intense spring rains and high temperatures, generated the "perfect storm" for mildew fungus development. A dry summer accelerated the ripening process, causing harvest to begin a week earlier than normal. Healthy grapes were of high quality with lower yields.
